The Kale Salad That Could

A dear friend once told us: “eat more kale.” At the time, we just thought they were a health-nut from Vermont, preaching to us city folk to get on the kale train. Little did we know we’d become kale-obsessed in no time. Seems to us that kale is just one of those vegetables that needs a little “massaging” (if ya catch our drift). May seem intimidating at first, but once you add some CHO avocado dressing, a few beautiful pom seeds and a handful of crunchy walnuts, you’ll have a salad that gives all its other little salad friends a run for their money. No experience in the kale arena? An un-experienced masseuse? Never fear, we’ve got you covered. Just follow the below recipe and prepare yourself for a kale experience you’ll never forget. Eat more kale. And start telling your friends.

Raw Kale Salad with Chobani Avocado Dressing

Salad:
1 bunch kale
1/4 C pomegranate arils
1/4 C chopped walnuts

Dressing:
6oz Plain 0% Chobani Greek Yogurt
1 avocado
2 cloves garlic
1 tsp olive oil
1 tsp lemon juice

For salad:

1.  Wash and tear kale into small pieces.

2.  Add arils and walnuts to kale in large bowl.

For dressing:

1.  Mash avocado and mix with Chobani.

2.  Chop garlic and add to mixture.

3.  Add oil and lemon juice. Mix until creamy.

4.  Add dressing to salad bowl (may make extra), and massage dressing on to kale for a few minutes.
