Summertime Fish Tacos

If there’s one dish that makes us want to play hooky from work, put our feet in flip-flops, legs in jorts, and catch the next flight to a warm locale, it’s gotta be fish tacos. While we may not be hanging 10 or getting our tan on, we can still eat like we’re on vacay with the healthy combo of light, flaky fish and fresh veggies. Luckily, making these at home is easy as pie.

Summer Time Fish Tacos made w/ Chobani Greek Yogurt

Fish Tacos
(makes 4 servings)

Ingredients:
1 lb white flaky fish
salt
pepper
1 lime, juiced
4 flour tortillas

Garnish:
shredded purple cabbage
hot sauce
Plain 0% Chobani Greek Yogurt
thinly sliced red onion
chopped fresh cilantro leaves

Directions
1. Preheat oven to 350 degrees.
2. Place tilapia fish fillets on a baking sheet, and squeeze lime juice over them, then season with salt and pepper.
3. Cook for 15 minutes, until flaky.  Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork.
4. Divide the fish among the tortillas and top with any or all of the garnishes.
