Grilled Corn with Chobani Lime Sauce

Like it or not, those glorious sunny summer days are slowly disappearing. Sure, we’ll get a few hot days here and there throughout fall, but the lazy haziness of August will soon be gone. So we’re determined to make the most of it. Yep, we’re looking to squeeze in every last drop of sunlight, every moment of beach time, and of course, we’re still chowing down on all the best summer foods. Speaking of food… (funny how the mind inevitably wanders)…As we make the most out of August, we’re finding fresh ways to reinvent some of our favorite summer staples.

Here, we’ve taken some farmer’s market corn, added a kick of spice, a handful of cheese, and (of course), a bit of Chobani. And this is no boiled corn-on-the-cob. We fired up the ‘ol grill and threw these beautiful yellow ears on. Does it get any more delicious than that? Funny you ask, because we believe it does. That’s right, we’re talking about  grilled corn with cotija cheese, fresh cilantro, and a delicious Chobani lime sauce. Plus a little hot pepper for extra spice. We told you – no standard corn here. Grilled, cheese-ed, sauced, spiced. Just like we said, squeezing every last drop out of summer!

Grilled Corn with Chobani Lime Sauce 2

Grilled Corn with Cotija Cheese and Chobani Lime Sauce

Grilled corn:

4-6 ears corn (or however many you’re serving)

Chobani Lime Sauce:

1 C Plain 2% Chobani Greek Yogurt

1 Tbsp fresh lime juice

salt and pepper to taste

Toppings:

1 C Cotija cheese, crumbled

chopped cilantro (a handful)

1 tsp chili powder (more/less depending on preferred spice)

salt and pepper to taste

Directions:

1. Heat grill.

2. Wrap corn in aluminum foil and place on grill. Grill 8 minutes, turning half-way through.

3. Remove aluminum foil and place grilled corn on a platter.

4. Combine sauce ingredients in a small bowl.

5. Top grilled corn with crumbled cheese, chopped cilantro, and a scoop of Chobani sauce.

6. Sprinkle chili powder and salt and pepper to taste. Enjoy!
