Stay Warm With Carrot Ginger Soup

It’s officially post-Thanksgiving, which to us means: WINTER. The solstice may not have rolled around yet, but the truth is: fall is officially over. So naturally, we’re all looking to bundle up and hunker down on the couch with a cozy blanket and a nice big bowl of warm soup. And while there’s definitely no shortage of seasonal squash soup recipes out there, to us, there’s truly nothing quite like a bowl of zingy Carrot Ginger soup to beat this chilly winter weather.

Now brace yourself. You already have a decent amount of anticipation going, and the news we’re about to deliver will only heighten it. Are you sitting down? We’re topping this soup with grilled – cheese – croutons. Yes, that’s exactly what it sounds like. And yes, these will dramatically change your soup game. Delicious, cheesy, melty croutons made from a perfectly grilled (and extra crispy) cheese sandwich.

So let’s get to it…

Ingredients:

2 Tbsp olive oil

1 1/2 C diced onion

3 Tbsp Ginger, chopped

1 Tbsp chopped garlic

2 peeled + sliced carrots

3 qts chicken stock

1 bay leaf

1 fresh thyme sprigs

1 tsp salt

1/4 tsp ground black pepper

2 Tbsp unsalted butter

2 C Plain 2% Chobani Greek Yogurt

2 slices of preferred bread (we used sourdough)

3 slices of cheddar cheese

Directions:

1.  Heat olive oil over medium heat in a large soup pot. Add onion, garlic and ginger and cook for 5 minutes, stirring occasionally.

2.  Add carrots, chicken stock, bay leaf, fresh thyme sprigs, salt and pepper. Simmer for 45 minutes until carrots are tender. Remove from heat and add Chobani and butter.

3.  Working in small batches, blend in a blender until smooth making sure to start blender slowly and increase speed gradually.

4.  Season with salt and pepper to taste. Add water or stock to adjust consistency if necessary.

5.  Butter two slices of your bread, add cheddar cheese slices in between, and grill sandwich in pan until crispy.

6.  Remove sandwich from pan and let it cool slightly. Cut sandwich into small, crouton-sized cubes. Top soup with cheesy croutons, and voila!
