Lobster Roll with Yogurt Dressing #madewithchobani

Lobstah lovah? You’re in luck. This Memorial Day weekend, we’re whipping up delicious lobster rolls fit for any summer food lover. It’s a thing of beauty, really. A delicious lobster roll is an undeniable treat. Throw a plate of chips on the side and yu’ll undoubtedly devour the meal in seconds. Okay, minutes…but it’ll be gone, at any rate.

Lobster Roll with Yogurt Green Goddess Dressing

Yields: 4 sandwiches

Ingredients:

1 cup Chobani 0% Plain Greek Yogurt
¼ cup Parsley leaves
¼ cup Tarragon
¼ cup Basil Leaves
¼ cup Dill
1 Garlic clove
3 tbsp Lemon Juice
1 tbsp Water
Salt and Pepper to taste
1 pound Maine Lobster Meat, cooked and cleaned
2 tbsp Red Onion, minced
3 tbsp Celery, minced
4 Potato Hotdog Buns
4 tbsp Butter

Yogurt Green Goddess Dressing Directions:

Blend Chobani 0% Plain Greek Yogurt, parsley, tarragon, basil, dill, garlic, lemon juice, water and salt and pepper (to taste) to an even consistency and reserve.

Lobster Roll Directions:

  1. Preheat oven to 400oF.
  2. Spread butter over the inside of the potato hotdog buns and toast until the butter is melted and bun is golden brown.
  3. In a bowl, mix the lobster, red onion, celery and green goddess dressing.
  4. Season with salt and pepper to taste.
  5. Fill the hotdog buns with Lobster Salad
  6. Serve
