Gluten-Free Oatmeal-Raisin Bread

Preparation

Step 1

Preheat oven to 350°F. Lightly coat 9x5-in loaf pan with nonstick cooking spray and set aside.

Step 2

In a large bowl, stir together flour, oats, baking soda, cinnamon and salt. In a medium bowl, whisk together applesauce, Chobani, sugar, oil, egg, and vanilla.

Step 3

Scrape Chobani mixture into dry ingredients and stir until half combined. Add raisins and pecans. Stir until just a few dry spots remain. Transfer to prepared loaf pan and bake until a cake tester inserted into center comes out clean, 50-60 minutes. Cool 15 minutes, loosen edges and turn cake onto a wire rack to cool completely.
