Preheat oven to 350°F. Sauté onions, celery and garlic in oil over medium heat until tender, about 6 minutes. Add stock and simmer until reduced by one quarter, about 2 minutes.
Empty stuffing mix into large bowl. Add onion-celery mixture, oregano, thyme, salt, and black pepper. Mix thoroughly. Let mixture cool slightly, then stir in Chobani.
Spread mixture into a 9x13-in pan. Brush melted butter over top and bake until browned, 20 to 25 minutes
