Baked Lemon Poppy Seed Doughnuts

Zesty lemon, crackly poppyseeds, and Chobani® Vanilla Blended Greek Yogurt. We love baking this donut for dessert in the spring and summer. Make a batch and share with friends at your next picnic.
In a medium bowl, whisk together eggs and sugar until mixture becomes pale yellow. Add yogurt, 1 teaspoon poppy seeds, lemon zest, lemon juice, salt, and butter.
In a separate large bowl, sift together flour, nutmeg, cinnamon, and baking powder. Add the wet ingredients to the dry and mix until just incorporated, being careful not to overmix. Transfer to a piping bag.
Coat 2 standard doughnut baking trays with nonstick spray. Pipe the batter into each well, leaving a ¼″ space below the rim. Bake at 350°F for 8-10 minutes, rotating halfway through.
In a small saucepan over medium heat, combine honey, butter, and powdered sugar. Bring to a simmer, stirring constantly. Reduce until thickened. Remove from heat and cover to keep warm until doughnuts are ready to be glazed.
Carefully dunk one side of each doughnut into the glaze. Sprinkle with remaining teaspoon of poppy seeds. Serve immediately.
