Chobani® Vanilla Blended Greek Yogurt gives these soft and chewy blondies a subtle sweetness and a fluffy, crumbly texture.
Slice bananas and toss in lemon juice. Place in a resealable bag and freeze until solid.
Combine yogurt, frozen bananas, and honey in a food processor and process until smooth. Transfer mixture to a freezer safe dish and cover. Freeze for 6 hours, or overnight.
Let the frozen yogurt temper at room temperature for 5 minutes to soften before serving.
Place sugar, syrup, and water in a heavy bottomed sauce pot and place on medium high heat.
Cook sugar mixture to 350°F, brushing down the sides with water if sugar crystals appear. Remove from heat and swirl in butter and melt completely.
Stir in heavy cream, vanilla, and salt. Set aside to cool.
In a large sauté pan, melt light brown sugar, butter, and cinnamon and bring to a simmer.
Add apples and simmer for 7 minutes, stirring occasionally. Stir in pecans, remove from heat, and set aside.
Preheat oven to 350° F and prepare a 9″x 13″ baking dish with non-stick pan spray.
In a stand mixer fitted with a paddle or using a hand mixer, beat butter and sugars on medium speed until light and fluffy, about 2 minutes.
Add the yogurt, eggs, and vanilla, and mix until incorporated. Add the flour, baking powder, and salt and mix until evenly combined.
Gently fold in caramelized apple and pecan mixture, including all liquid, until well mixed. Pour batter into prepared baking dish and bake for 20-25 minutes, or until edges are golden brown. Remove from the oven and let cool completely before slicing.
