A one-jar recipe that’s so easy to make and a delicious way to enjoy our non-dairy oatmilk. Chia seeds absorb oatmilk's creamy, delicious texture, for a silky, chocolaty treat.
Preheat oven to 325°F. Place liners in 2 12-count muffin tins.
Combine flour, baking powder, baking soda, and salt in a mixing bowl. Set aside.
In a stand mixer with the paddle attachment, or using a hand mixer, cream together butter and sugars.
Add bananas to butter mixture and mix until combined. Add eggs one at a time, scraping the bowl as you go to ensure even incorporation.
Add oatmilk and mix until combined. Slowly add dry ingredients and mix until just combined.
Fold in oats and chocolate chips.
Fill muffin tins ¾ of the way and bake for 20 minutes or until a toothpick comes out clean. Let cool on a wire rack.
