Frozen Greek Yogurt with Caramelized Peaches and Mint

Make the most of summer stone fruit: ripe, juicy peaches, cooked with honey to release their sugar. Served with frozen Greek Yogurt made with a few vigirous shakes with ice and salt. Make sure your resealable bag is sealed tight.
In a large skillet, add honey and peaches, and turn on medium-high heat. Cook mixture until juices from peaches release and sugars from honey start to darken, about 4 minutes. Continue to cook for another 2 minutes until mixture thickens. Keep warm.
To make frozen yogurt, add 1 cup yogurt to a quart-sized resealable bag, making sure it is closed tight. Place the quart-sized bag into a gallon-sized resealable plastic bag with ¼ cup of salt and 2 cups of ice.
Shake vigorously for 3-5 minutes or until the yogurt is completely frozen. Bag will become very cold. Repeat with remaining yogurt, salt, and ice.
Remove frozen yogurt and place in a bowl. Add warm peaches and mint to serve.
