A frothy and refreshing iced coffee beverage, with caramel sweetness.
In a large saucepan, dissolve sugar in water over medium heat. Turn heat to high, and swirl pan to heat evenly.
Once caramel has turned to a dark amber color, remove from heat and add oatmilk to stop the cooking process.
After steam dissipates, stir in vegan butter, then vanilla, then a bit of salt to taste.
Extract espresso at 1:2 ratio (20g in/40 out, 25 seconds).
In a bartender shaker, add espresso, caramel syrup, 2-4 oz. of oatmilk, and ice.
Shake vigorously, and strain beverage into a glass over fresh ice.
Garnish with maraschino cherry on a toothpick.
