Anthony's French Toast Latte

A wintry treat. Warm spiced latte with vanilla undertones. Recipe by Anthony Ragler.
In a medium saucepan, combine water, brown sugar, vanilla bean pods, cinnamon, nutmeg, and allspice, and bring to a boil.
Remove from heat and allow flavors to settle for 1 hour.
Decant contents and strain them into a resealable container with a spout. Put the cinnamon sticks and vanilla bean pods in the container, as well.
Pour simple syrup into a mug.
Extract espresso at 1:2 ratio (20g in/40 out) and pour over syrup into the mug.
Steam oatmilk and pour over espresso.
