Incorporating creamy Greek Yogurt into the mix adds textural depth to this classic, umami-packed frittata.
Preheat the oven to 450ºF.
In a large mixing bowl, whisk the eggs, yogurt, cheese, salt, and pepper until incorporated; fold in mushrooms.
Set a large oven-safe skillet over medium-high heat.
Swirl oil around the skillet, then pour in the egg mixture and cook undisturbed for 1 full minute, or until the edges are just beginning to set.
Turn off heat and place the skillet in the oven. Bake the frittata until the top-center is just set, 20-25 minutes.
Garnish with a dollop of yogurt and chopped chives.
