Ayo's Yogurt Ata Dindin and Baked Sweet Potato

Caramelized sweet potato sits atop spicy tomato-pepper sauce and cooling Greek Yogurt.
Preheat oven to 350ºF.
In a saucepan, heat oil over medium heat. Add tomatoes, peppers, onion, thyme, and rosemary and cook until still red but coarse and dry. Set aside.
Thinly slice the sweet potato horizontally and coat generously with olive oil, brown sugar, salt, and pepper. Roast on a sheet pan for 30 minutes, or until tender and caramelized.
To serve, spread yogurt on the bottom of a plate, then top the yogurt with tomato-pepper sauce. Add the sweet potato and serve warm.
