A creamy, Cajun spiced sauce that uses Chobani® Plain Whole Milk Greek Yogurt. Make sure the Greek Yogurt is at room temperature so as to blend smoothly with the warm cream mixture while whisking.
Place a large sauté pan on medium heat, add butter, garlic, shallot, and cook for 2 minutes. Add white wine and reduce to au sec (wine reduced by 75%).
Add heavy cream, Cajun spice blend, hot sauce, and reduce by half. Add parmesan and stir to melt.
While whisking, slowly pour the hot cream mixture into the Chobani® Greek Yogurt, as if tempering eggs. Season with salt and hold hot for service at a temperature not exceeding 170°F.
