Creamy guacamole with a charred jalapeño twist.
Heat oven to 425°F convection.
Toss jalapeños with extra virgin olive oil and kosher salt. Place on a rimmed baking sheet lined with aluminum foil.
Place in the oven for 12 minutes or until just starting to char on the outside. Remove from oven and let cool.
Remove seeds from jalapeño and small dice.
Place garlic, red onion, and lime juice in bowl and mix. Add avocado, Greek yogurt, roasted jalapeño, cilantro, lime juice, lime zest, and salt.
Mix until fully incorporated and store in a nonreactive container, with foodservice film pressed to the surface of the guacamole.
