A surprisingly refreshing sweet-and-smooth textural mouth adventure of a drink.
In a bowl or measuring glass, soak basil seeds in water for 15 minutes. Strain and set aside.
In a small-medium pot, bring tapioca jelly and water to a boil. Cook for 15 minutes, then strain and set aside to cool.
In a blender, combine the cubes of watermelon, yogurt, lime juice, palm sugar or condensed milk, and ice. Blend until smooth.
To assemble the drink, add soaked basil seeds to the bottom of a glass. Fill the glass most of the way with the watermelon smoothie and top with tapioca jelly and whipped cream.
