Coffee Coconut Granola

Crunchy coconut granola with a ground coffee kick.
Preheat oven to 300ºF.
Bring honey, brown sugar, and oil to a simmer, and add coffee grounds. Simmer for 3 minutes, or until coffee is fragrant and activated.
Remove mixture from heat, add coffee extract, and pour mixture over remaining ingredients in bowl and toss to coat evenly.
Place on sheet tray lined with parchment paper and bake for 30 mins, regularly stirring the mixture and rotating the tray to cook evenly.
Remove from oven and allow to cool. Once cool, break up granola carefully, attempting to retain clusters. Store in airtight container until ready to use.
