Maria's Pinto Bean Soup and Yogurt Crema

A hearty and warming soup that’s ready in about an hour. Recipe by Maria Mazon.
In a large pot over medium heat, sauté the onion, garlic, chiles, and salt in oil until fragrant.
Add half the beans, the cilantro, and the vegetable stock. Sauté until chiles are soft, about 20 minutes.
Using a hand blender, blend half the soup and yogurt until smooth.
Add blended soup and remaining beans back to the pot and simmer until ready to serve.
Top with yogurt and croutons or crispy tortilla chips.
