Natasha's Spicy Shrimp with Cilantro Lime Rice

Juicy fried shrimp served over cilantro lime rice with a spicy chili drizzle. Recipe by Natasha Ashley.
Add seasoning to a small bowl and mix together. Sprinkle half the mixture over shrimp to coat. Coat seasoned shrimp with cornstarch.
Add flour, cornmeal, and remainder of seasoning mix to a large bowl and whisk together until combined.
Add milk to a separate small bowl.
Heat a large skillet over medium heat. Add oil and heat to 375ºF.
For each shrimp, dredge in flour mixture, then in milk, and back into flour mixture.
Place coated shrimp in oil and fry for 3 to 4 minutes, or until golden brown. Repeat with remaining shrimp.
Take shrimp out of oil with a slotted spoon and place on a paper towel-lined plate.
Add all ingredients to a medium bowl and whisk together until combined. Set aside.
Add cooked rice, lime juice, and cilantro to a large bowl. Gently fold together with a spatula.
Drizzle spicy sauce over shrimp as desired. Evenly distribute cilantro lime rice in serving bowls. Add coleslaw mix, tomatoes, and red onions. Top with spicy shrimp and scallion.
