Probiotic Pancakes

Pancake mix enriched with Chobani® Nonfat Plain Greek Yogurt, griddled and topped with a Whipped Peanut Butter Yogurt. Served with a Caramelized Banana Maple Syrup.
Top the first pancake with one tablespoon of the Whipped Peanut Butter Yogurt. Top the peanut butter yogurt with another pancake, and then top the second pancake with another tablespoon of the peanut butter yogurt.
Top the peanut butter yogurt with ¼ cup of the Caramelized Banana Maple Syrup.
Combine the yogurt, eggs, and milk together in a large bowl and mix until evenly combined.
Add the pancake mix and mix until just incorporated. There may still be lumps.
Preheat a pan, griddle, or flat top to medium heat, about 350°F, and spray the pan with pan spray. Pour ⅓ cup of pancake batter onto the pan and let cook for 1-2 minutes until you start to see bubbles forming on top of the raw batter.
Flip the pancake and continue to cook for another 1-2 minutes, until fully cooked and evenly browned. Remove the pancakes and reserve.
Combine the yogurt, eggs, and milk together in a large bowl and mix until evenly combined.
Combine the flour, cornstarch, baking soda, sugar, and salt in a separate medium-sized bowl and stir to combine.
Sift the dry ingredients into the bowl with the wet ingredients and mix until just incorporated. There may still be lumps.
Preheat a pan, griddle, or flat top to medium heat, about 350°F, and spray the pan with pan spray. Pour ⅓ cup of pancake batter onto the pan and let cook for 3 minutes until you start to see bubbles forming on top of the raw batter.
Flip the pancake and continue to cook for another 2 minutes, until fully cooked and evenly browned. Remove the pancakes and reserve.
Combine all ingredients together in the bowl of a stand mixer with the wire whip attachment. Whip ingredients until smooth and fluffy, about 3 minutes, stopping to scrape down the sides as necessary. Remove from the mixing bowl and reserve.
Place a large frying pan over medium heat, add the butter, and let it melt. Once melted, add the sliced bananas, and cook for 2-3 minutes, until browned and softened. Add the maple syrup and salt, and stir to combine.
Bring to a boil to combine the flavors and then turn off the heat. Reserve, and hold warm if possible.
