Chicken salad made modern with dried cherries, smoked almonds, and spices.
Season chicken with salt. Following instructions for hot smoker, smoke chicken for 2 hours or until internal temperature reaches 165°F. Let chicken cool on a tray to reserve juices. Slice chicken into ½” pieces.
Stir together all ingredients, including chicken juices from tray, and mix thoroughly. Serve as desired.
