Vanilla Lemongrass Frozen Greek Yogurt

Refreshing vanilla bean froyo with subtle hints of botanical lemon flavor.
Combine heavy cream, milk, sugar, and salt in a small pot and bring to a boil, stirring until sugar is dissolved. Remove from heat, add vanilla bean and lemongrass, and let steep for a minimum of two hours.
Once cream is cooled and finished steeping, discard lemongrass and vanilla bean. Whisk in yogurt. Churn in an ice cream machine, transfer to a storage container, and freeze.
For best results, allow the frozen Greek yogurt to temper in a refrigerator before serving.
