A casserole is a type of deep-dish baking pan, and anything baked in it is considered a casserole. Ours is made with creamy Chobani® Whole Milk Plain Greek Yogurt, juicy chicken sausage, and wilted spinach, hidden beneath a bread-crumbly layer.
Preheat oven to 400ºF.
On a small sheet tray, spread cauliflower and chicken sausage links with 1 tablespoon olive oil and bake for 10 minutes, or until cauliflower is starting to brown and sausage is cooked through. Slice sausage into ¼″ disks and set aside.
In a medium saucepan, sauté the onions in the remaining olive oil until translucent, about 3 to 5 minutes. Add spinach and sauté until wilted. Remove from pan and squeeze until dry.
Combine milk and cornstarch in the pan and warm over a medium heat until the mixture thickens into a heavy cream consistency. Add the garlic, rosemary, chili flakes, and salt and continue to cook for 1 minute. Add the Cheddar and whisk until completely melted. Remove from heat and whisk in yogurt.
In a large bowl, fold together the sausage, cauliflower, spinach, cheese sauce, and ½ cup panko until completely combined. Pour mixture into a greased 13″x9″ baking pan and sprinkle the remaining panko on top. Cover with foil and bake at 400°F for 15 minutes or until casserole is bubbling.
Remove foil and continue to bake for an additional 5 minutes, or until panko is golden brown. Let sit for 5 minutes and serve.
